Balsamic vinegar of Modera is made from cooked grape must, through natural fermentation, matured in wood. No additional spices or flavourants are added. Balsamic vinegar has a soft sweetness that is balanced by a pleasant acidity; the flavour is mellow and complex. As this is a natual process the finer characteristics of the vinegar vary seasonally and depend on the individual blender.
