The Organic Cabernet Sauvignon Merlot is a 50% Cabernet Sauvignon and 50% Merlot blend. The grapes are sourced from the best organic vineyards across the Western Cape and a quarter of the grapes come directly from our estate. The grapes were sorted and destemmed, and a wild, spontaneous fermentation took place in a combination of concrete tanks and open top stainless-steel fermenters. 35% of the wine spent 12 months in older oak barrels and foudre, after which the assemblage was made up and the wine was bottled.
