Mainly produced by the Fujian province in China.  It is often described as a partially oxidised or semi-fermented tea. The fermentation is interrupted at a critical point that protects the very delicate and fragrant flavour.  During processing, the leaves are wilted and rolled into a spherical bubble-like shape, which is what makes Oolong easily recognisable.
